Ingredients
Crust:

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup powdered sugar
Filling:

1 cup granulated sugar

2 large eggs

2 tablespoons all-purpose flour

3 tablespoons fresh lemon juice

Zest of 1 lemon
Instructions

Preheat oven to 350°F (175°C).

In a medium bowl, mix 1 cup flour, softened butter, and powdered sugar until the mixture is crumbly and holds when pressed.

Press mixture evenly into the bottom of an 8×8-inch baking dish.

Bake crust for about 15 minutes or until lightly golden.

While the crust bakes, whisk together granulated sugar, eggs, 2 tablespoons flour, lemon juice, and lemon zest until smooth.

Pour lemon filling over the warm crust.

Return to the oven and bake for an additional 20–25 minutes, until the filling is set.

Cool to room temperature, then refrigerate for at least 1 hour before cutting into squares.
