Description

A light and fruity dessert made with sweet plums and a creamy cottage cheese layer, topped with a golden crumble. Perfect for a summer treat or a comforting end to a meal.


Ingredients

  • 500g ripe plums, halved and pitted
  • 2 tbsp sugar (for plums)
  • 200g cottage cheese
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp honey or sugar (for cheese mixture)
  • 100g all-purpose flour
  • 50g rolled oats
  • 75g butter, cold and cubed
  • 50g brown sugar
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Place the halved plums in a baking dish and sprinkle with 2 tablespoons of sugar. Set aside.
  3. In a bowl, mix the cottage cheese, egg, vanilla extract, and honey or sugar until smooth. Spread the mixture over the plums evenly.
  4. In another bowl, combine flour, oats, brown sugar, and a pinch of salt. Add the cubed butter and rub it into the dry ingredients using your fingertips until it resembles breadcrumbs.
  5. Sprinkle the crumble topping evenly over the cottage cheese layer.
  6. Bake for 35–40 minutes, or until the top is golden and the filling is bubbling.
  7. Let it cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • You can substitute plums with peaches, nectarines, or mixed berries.
  • Use low-fat cottage cheese for a lighter version.
  • Serve with a scoop of vanilla ice cream or a dollop of Greek yogurt.
