- 1/2 cup ube halaya (purple yam jam)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1/2 cup sour cream
- 1 tsp vanilla extract
- Purple food coloring (optional)
- 1 1/2 cups powdered sugar (for frosting)
- 2 tbsp milk (for frosting)
- 2 tbsp butter, softened (for frosting)
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
- In a separate large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg, ube halaya, sour cream, and vanilla extract until well combined. Add food coloring if using.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized dough portions onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until the edges are set but centers remain soft.
- Let the cookies cool completely before frosting.
- For the frosting, beat powdered sugar, milk, and softened butter until smooth.
- Spread frosting on cooled cookies and decorate with sprinkles if desired.
Notes
- Store cookies in an airtight container for up to 5 days.
- Chill dough for 30 minutes if you prefer thicker cookies.
- You can substitute sour cream with plain yogurt.
