Description

Soft and fluffy Ube Lofthouse Cookies perfect for kids, featuring a vibrant purple hue and subtle sweet flavor of ube (purple yam).


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup ube halaya (purple yam jam)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • Purple food coloring (optional)
  • 1 1/2 cups powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)
  • 2 tbsp butter, softened (for frosting)
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a separate large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg, ube halaya, sour cream, and vanilla extract until well combined. Add food coloring if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized dough portions onto the prepared baking sheet, spacing them apart.
  7. Bake for 10-12 minutes or until the edges are set but centers remain soft.
  8. Let the cookies cool completely before frosting.
  9. For the frosting, beat powdered sugar, milk, and softened butter until smooth.
  10. Spread frosting on cooled cookies and decorate with sprinkles if desired.

Notes

  • Store cookies in an airtight container for up to 5 days.
  • Chill dough for 30 minutes if you prefer thicker cookies.
  • You can substitute sour cream with plain yogurt.
