- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/2 cup strong brewed coffee or espresso, divided
- 8 oz mascarpone cheese
- 1/4 cup powdered sugar
- 1 tsp coffee liqueur (optional)
- 1/2 tsp vanilla extract
- 2 tbsp cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.
- In a saucepan, melt the butter. Remove from heat and stir in granulated sugar, eggs, and vanilla extract.
- Mix in cocoa powder, flour, salt, and baking powder until well combined.
- Add 1/4 cup of the brewed coffee or espresso and stir to incorporate.
- Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out with moist crumbs. Let cool completely.
- In a bowl, mix mascarpone cheese, powdered sugar, remaining 1/4 cup of coffee, coffee liqueur (if using), and vanilla extract until smooth.
- Spread the mascarpone mixture evenly over the cooled brownies.
- Chill in the refrigerator for at least 2 hours or until set.
- Before serving, dust the top with cocoa powder. Cut into squares and enjoy.
Notes
- For a stronger coffee flavor, increase the amount of espresso or add instant espresso powder.
- Let the brownies cool fully before topping to avoid melting the mascarpone layer.
- Use high-quality cocoa and mascarpone for best flavor.
