Description

These Strawberry Cheesecake Cinnabon Rolls combine the best of cinnamon rolls, creamy cheesecake, and juicy strawberries in one indulgent treat! Soft, buttery dough rolled with cinnamon-sugar and tangy cheesecake filling, topped with cream cheese icing and fresh strawberries—perfect for dessert or a decadent breakfast.


Ingredients

For the Dough:

  • 2 cups (240g) all-purpose flour

  • 1/2 cup (120ml) whole milk, lukewarm

  • 2 1/4 tsp (7g) active dry yeast

  • 1/4 cup (50g) granulated sugar

  • 1/4 cup (60g) unsalted butter, softened

  • 1 large egg

  • 1/2 tsp vanilla extract

  • 1/2 tsp salt

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened

  • 1/4 cup (50g) granulated sugar

  • 1 tsp vanilla extract

  • 1 tbsp all-purpose flour

  • 1/2 cup (120ml) sour cream or Greek yogurt

For the Cinnamon Sugar Filling:

  • 1/2 cup (100g) packed brown sugar

  • 2 tbsp ground cinnamon

  • 1/4 tsp salt

  • 1/4 cup (60g) unsalted butter, softened

For the Strawberry Topping:

  • 1 cup (150g) fresh strawberries, hulled and sliced

  • 1 tbsp sugar (optional)

For the Cream Cheese Icing:

 

  • 4 oz (115g) cream cheese, softened

  • 1/2 cup (60g) powdered sugar

  • 1/4 tsp vanilla extract

  • 1-2 tbsp whole milk (adjust for consistency)

  • Pinch of salt


Instructions

Step 1: Dough Preparation

  1. Combine lukewarm milk and yeast. Let sit 5–10 minutes until frothy.

  2. In a large bowl, mix flour, sugar, salt. Add yeast mixture, butter, egg, and vanilla. Mix and knead for 8–10 minutes until smooth.

  3. Place dough in a greased bowl. Cover and let rise 1–1.5 hours until doubled.

Step 2: Cheesecake Filling

  1. Beat cream cheese until smooth.

  2. Add sugar, vanilla, flour, and sour cream. Beat until fully combined. Set aside.

Step 3: Cinnamon Sugar Filling

  1. Mix brown sugar, cinnamon, and salt in a small bowl.

  2. Soften butter until spreadable.

Step 4: Assemble the Rolls

  1. Punch down dough. Roll into 16×12 inch rectangle.

  2. Spread butter, then cheesecake mixture, leaving edges clean.

  3. Sprinkle with cinnamon sugar mix.

  4. Roll up from the long edge. Slice into 12 rolls.

  5. Place in greased 9×13-inch pan. Let rise 30–45 minutes.

Step 5: Bake

  1. Preheat oven to 350°F (175°C).

  2. Bake 25–30 minutes until golden. Cool for 10 minutes.

Step 6: Make Cream Cheese Icing

  1. Beat cream cheese, powdered sugar, vanilla, and salt.

  2. Add milk gradually for desired consistency. Spread over warm rolls.

Step 7: Strawberry Topping

 

  1. Slice strawberries. Toss with sugar if desired.

  2. Add to rolls before serving.
