Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.
- Add egg, vanilla extract, and almond extract (if using) and beat until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide dough if using multiple colors and mix in food coloring as desired.
- Roll out the dough on a floured surface to about 1/4 inch thickness and cut into spring-themed shapes.
- Place cookies on prepared baking sheets and bake for 8-10 minutes or until edges are lightly golden.
- Let cookies cool completely on wire racks before decorating.
- Decorate with royal icing, sprinkles, or edible flowers. Let icing set before serving or storing.

- Dough can be chilled for 30 minutes for easier handling.

- Royal icing can be made ahead and kept in the fridge for several days.
