Description
A light, refreshing salad featuring crisp cucumbers and a savory sesame dressing, perfect as a side dish or a healthy snack.
Ingredients
Scale
- 2 large cucumbers, thinly sliced
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
- 1 tablespoon toasted sesame seeds
- 1 green onion, thinly sliced
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Place cucumber slices in a colander and sprinkle with salt. Let sit for 15 minutes to draw out moisture, then gently pat dry with paper towels.
- In a bowl, whisk together rice vinegar, sesame oil, soy sauce, sugar, garlic, and ginger.
- Add the cucumbers to the dressing and toss to combine.
- Sprinkle with sesame seeds, green onions, and red pepper flakes if using.
- Chill for 10-15 minutes before serving for best flavor.
Notes
- Use English or Persian cucumbers for fewer seeds and more crunch.
- For a spicier version, add more red pepper flakes or a dash of chili oil.
- Can be made a few hours ahead; flavors improve as it sits.
