- 1 cup coconut milk (chilled)
- 1 shot espresso or 1/4 cup strong brewed coffee (chilled)
- 1–2 tsp maple syrup or sweetener of choice (optional)
- 1/4 tsp beet powder or a few drops of pink food coloring
- Ice cubes
Instructions
- In a small cup, prepare and chill your espresso or coffee.
- In a separate glass, mix the coconut milk with beet powder or pink food coloring until evenly colored.
- Add sweetener to the pink coconut milk if desired, and stir well.
- Fill a tall glass with ice cubes.
- Pour the pink coconut milk over the ice.
- Slowly pour the espresso or coffee over the coconut milk to create a layered effect.
- Stir gently if you prefer a mixed latte, and enjoy immediately.

- For a caffeine-free version, use chicory or a decaf alternative.
- Use unsweetened coconut milk to control sweetness levels.
