Description

A rustic and simple peach galette made with juicy fresh peaches wrapped in a buttery, flaky crust. Perfect for summer desserts.


Ingredients

  • 1 1/2 pounds fresh peaches (about 4-5 medium), sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 pie crust (homemade or store-bought)
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch, cinnamon, and salt. Mix gently until peaches are coated.
  3. Roll out the pie crust on the prepared baking sheet into a rough 12-inch circle.
  4. Spoon the peach filling into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the filling, pleating as needed. Leave the center exposed.
  6. Brush the crust with the beaten egg and sprinkle with coarse sugar.
  7. Bake for 35-40 minutes or until the crust is golden brown and the filling is bubbly.
  8. Allow the galette to cool slightly before serving. Serve warm or at room temperature.

Notes

  • Use ripe but firm peaches for best texture.
  • Can be served with a scoop of vanilla ice cream or whipped cream.
  • Galette can be made a few hours in advance and stored at room temperature.
