Description
A rustic and simple peach galette made with juicy fresh peaches wrapped in a buttery, flaky crust. Perfect for summer desserts.

- 1 1/2 pounds fresh peaches (about 4-5 medium), sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 pie crust (homemade or store-bought)
- 1 egg, beaten (for egg wash)
- 1 tbsp coarse sugar (for sprinkling)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch, cinnamon, and salt. Mix gently until peaches are coated.
- Roll out the pie crust on the prepared baking sheet into a rough 12-inch circle.
- Spoon the peach filling into the center of the crust, leaving a 2-inch border.
- Fold the edges of the crust over the filling, pleating as needed. Leave the center exposed.
- Brush the crust with the beaten egg and sprinkle with coarse sugar.
- Bake for 35-40 minutes or until the crust is golden brown and the filling is bubbly.
- Allow the galette to cool slightly before serving. Serve warm or at room temperature.
Notes
- Use ripe but firm peaches for best texture.
- Can be served with a scoop of vanilla ice cream or whipped cream.
- Galette can be made a few hours in advance and stored at room temperature.
