- 6 cups fresh or canned sliced peaches
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp lemon juice
- 2 tsp cornstarch
- 1 cup all-purpose flour
- 1/4 cup granulated sugar (for topping)
- 1/4 cup brown sugar (for topping)
- 1 tsp baking powder
- 1/2 tsp salt
- 6 tbsp unsalted butter (cold, diced)
- 1/4 cup boiling water
- Optional: vanilla ice cream for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine peaches, 3/4 cup sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well.
- Pour the peach mixture into a greased 9×13-inch baking dish and bake for 10 minutes.
- Meanwhile, in another bowl, mix flour, 1/4 cup sugar, 1/4 cup brown sugar, baking powder, and salt.
- Add cold butter to the flour mixture and cut in using a pastry blender or fork until the mixture resembles coarse crumbs.
- Stir in boiling water just until combined to form a thick batter.
- Remove the baking dish from the oven and drop spoonfuls of the topping over the peaches.
- Return to oven and bake for 30-35 minutes or until the topping is golden brown and cooked through.
- Let cool slightly before serving. Serve warm with vanilla ice cream if desired.
Notes
- You can use frozen peaches if fresh are not available, just thaw and drain them first.
- Adjust sugar based on the sweetness of the peaches.
- For a crispier topping, sprinkle a little sugar on top before baking.
