Description

A classic Southern dessert, Peach Cobbler is a warm, comforting dish made with sweet peaches and a buttery, biscuit-like topping, perfect served with vanilla ice cream.


Ingredients

  • 6 cups fresh or canned sliced peaches
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp lemon juice
  • 2 tsp cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup brown sugar (for topping)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp unsalted butter (cold, diced)
  • 1/4 cup boiling water
  • Optional: vanilla ice cream for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine peaches, 3/4 cup sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well.
  3. Pour the peach mixture into a greased 9×13-inch baking dish and bake for 10 minutes.
  4. Meanwhile, in another bowl, mix flour, 1/4 cup sugar, 1/4 cup brown sugar, baking powder, and salt.
  5. Add cold butter to the flour mixture and cut in using a pastry blender or fork until the mixture resembles coarse crumbs.
  6. Stir in boiling water just until combined to form a thick batter.
  7. Remove the baking dish from the oven and drop spoonfuls of the topping over the peaches.
  8. Return to oven and bake for 30-35 minutes or until the topping is golden brown and cooked through.
  9. Let cool slightly before serving. Serve warm with vanilla ice cream if desired.

Notes

  • You can use frozen peaches if fresh are not available, just thaw and drain them first.
  • Adjust sugar based on the sweetness of the peaches.
  • For a crispier topping, sprinkle a little sugar on top before baking.
