  • 12 oz smoked sausage, sliced

  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 8 oz penne or rotini pasta (uncooked)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • Chopped parsley, for garnish

Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add sausage and cook until browned, about 3–4 minutes.
  • Add onion and garlic; sauté until fragrant and soft, about 2–3 minutes.
  • Pour in chicken broth, diced tomatoes, heavy cream, and uncooked pasta. Stir in Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
  • Stir in cheese until melted and creamy.
  • Garnish with chopped parsley and serve hot.

  • Use kielbasa, andouille, or any smoked sausage you prefer.
  • Substitute half-and-half or milk for heavy cream to lighten it up.
