- 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into chunks
- 1 cup jasmine rice, rinsed
- 1 can (13.5 oz) coconut milk
- 1 cup chicken broth
- 1 lime, zested and juiced
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 1/4 tsp red pepper flakes (optional)
- Fresh cilantro or green onions, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until translucent, about 3 minutes.
- Stir in garlic and cook for another 30 seconds.
- Add chicken, salt, pepper, cumin, and red pepper flakes (if using). Cook until the chicken is browned on all sides, about 5-7 minutes.
- Stir in rice, coconut milk, chicken broth, lime zest, and lime juice. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff with a fork and garnish with fresh cilantro or green onions before serving.
Notes
- You can substitute chicken with tofu or shrimp for variation.
- Add vegetables like peas, bell peppers, or spinach for extra nutrition.
- Use light coconut milk for a lower-fat option.
