- 2 boneless, skinless chicken breasts
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 3 garlic cloves, minced
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 6 oz soba or rice noodles
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1/2 cup sliced cucumber
- 2 green onions, chopped
- 1 tablespoon sesame seeds (optional)
- Salt and pepper to taste
Instructions
- Cook the noodles according to package instructions. Drain and rinse under cold water. Set aside.
- In a bowl, whisk together soy sauce, honey, garlic, rice vinegar, and sesame oil to make the glaze.
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add chicken and cook for 5–7 minutes per side, or until cooked through.
- Pour the glaze over the chicken in the skillet and cook for another 2–3 minutes, spooning the sauce over the chicken until it thickens and coats the meat.
- Remove chicken from heat and let rest for a few minutes, then slice thinly.
- Assemble bowls by dividing noodles into serving dishes. Top with sliced chicken, carrots, cabbage, cucumber, and green onions.
- Drizzle any remaining glaze over the bowl and sprinkle with sesame seeds if using. Serve immediately.
