- 1/2 teaspoon almond extract (optional)
- Royal icing in assorted colors (white, blue, grey, green)
- Decorating tools (piping bags, tips, toothpicks)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, wrap in plastic wrap, and chill for at least 1 hour.
- Roll out the chilled dough to about 1/4 inch thickness on a lightly floured surface.
- Cut out mountain-themed shapes using cookie cutters and place them on the prepared baking sheets.
- Bake for 8–10 minutes or until edges just begin to turn golden.
- Let cookies cool completely on wire racks.
- Prepare royal icing and color as desired for mountain scenes.
- Decorate cookies with royal icing using piping bags and allow icing to set completely before serving or packaging.
