Description

Mountain Baby Shower Cookies are adorable and delicious sugar cookies decorated with mountain-themed icing, perfect for celebrating a nature-inspired baby shower.


Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Royal icing in assorted colors (white, blue, grey, green)
  • Decorating tools (piping bags, tips, toothpicks)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Divide the dough in half, wrap in plastic wrap, and chill for at least 1 hour.
  7. Roll out the chilled dough to about 1/4 inch thickness on a lightly floured surface.
  8. Cut out mountain-themed shapes using cookie cutters and place them on the prepared baking sheets.
  9. Bake for 8–10 minutes or until edges just begin to turn golden.
  10. Let cookies cool completely on wire racks.
  11. Prepare royal icing and color as desired for mountain scenes.
  12. Decorate cookies with royal icing using piping bags and allow icing to set completely before serving or packaging.
