Description

Mexican Street Corn, also known as Elote, is a popular Mexican street food featuring grilled corn on the cob slathered with a creamy, tangy, and cheesy topping.


Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • Salt, to taste
  • Lime wedges, for serving

Instructions

  1. Preheat a grill to medium-high heat.
  2. Grill the corn for 7-10 minutes, turning occasionally until slightly charred on all sides.
  3. In a bowl, mix mayonnaise, sour cream, garlic, lime juice, and a pinch of salt.
  4. Brush the creamy mixture evenly over the grilled corn.
  5. Sprinkle cotija cheese and chili powder generously on top.
  6. Garnish with chopped cilantro and serve with lime wedges.
