Scale
- 1 cup small sago pearls
- 2 ripe mangoes, peeled and diced
- 1/2 cup mango puree
- 1 cup coconut milk
- 1/2 cup evaporated milk (optional)
- 2–3 tbsp sugar (adjust to taste)
- 1/2 tsp vanilla extract (optional)
- Ice cubes or crushed ice (optional, for serving)
- Mint leaves (optional, for garnish)
Instructions
- Boil water in a large pot and add the sago pearls. Cook for about 10-15 minutes until the sago becomes translucent, stirring occasionally to prevent sticking.
- Turn off the heat and cover the pot. Let the sago sit for another 10 minutes to finish cooking.
- Drain the sago pearls and rinse under cold water to remove excess starch. Set aside.
- In a mixing bowl, combine the coconut milk, evaporated milk (if using), mango puree, sugar, and vanilla extract. Stir until the sugar is dissolved.
- Add the cooked sago pearls to the mango mixture and mix well.
- Chill in the refrigerator for at least 1 hour before serving.
- To serve, divide into bowls and top with diced mangoes and ice cubes if desired. Garnish with mint leaves.
Notes
- Use ripe and sweet mangoes for the best flavor.
- Adjust sugar based on the sweetness of the mangoes and your preference.
- You can blend one mango into a puree and dice the other for added texture.
- For a vegan version, omit evaporated milk and stick to coconut milk only.
