Description

A refreshing and creamy Asian dessert made with mango puree, chewy sago pearls, and coconut milk, perfect for warm weather.


Ingredients

  • 1 cup small sago pearls
  • 2 ripe mangoes, peeled and diced
  • 1/2 cup mango puree
  • 1 cup coconut milk
  • 1/2 cup evaporated milk (optional)
  • 23 tbsp sugar (adjust to taste)
  • 1/2 tsp vanilla extract (optional)
  • Ice cubes or crushed ice (optional, for serving)
  • Mint leaves (optional, for garnish)

Instructions

  1. Boil water in a large pot and add the sago pearls. Cook for about 10-15 minutes until the sago becomes translucent, stirring occasionally to prevent sticking.
  2. Turn off the heat and cover the pot. Let the sago sit for another 10 minutes to finish cooking.
  3. Drain the sago pearls and rinse under cold water to remove excess starch. Set aside.
  4. In a mixing bowl, combine the coconut milk, evaporated milk (if using), mango puree, sugar, and vanilla extract. Stir until the sugar is dissolved.
  5. Add the cooked sago pearls to the mango mixture and mix well.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. To serve, divide into bowls and top with diced mangoes and ice cubes if desired. Garnish with mint leaves.

Notes

  • Use ripe and sweet mangoes for the best flavor.
  • Adjust sugar based on the sweetness of the mangoes and your preference.
  • You can blend one mango into a puree and dice the other for added texture.
  • For a vegan version, omit evaporated milk and stick to coconut milk only.
