Description

These Lychee Rosé Popsicles are a refreshing and elegant summer treat made with sweet lychee fruit and sparkling rosé wine, perfect for cooling down with a touch of sophistication.


Ingredients

  • 1 can (20 oz) lychees in syrup
  • 1 cup rosé wine
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Drain the lychees, reserving the syrup.
  2. In a blender, combine lychees, 1/2 cup of the reserved syrup, rosé wine, lemon juice, and honey if using. Blend until smooth.
  3. Pour the mixture into popsicle molds, leaving a little room at the top for expansion.
  4. Insert sticks and freeze for at least 6 hours or overnight until completely frozen.
  5. To release, run warm water over the outside of the molds for a few seconds.
  6. Garnish with fresh mint leaves if desired and serve immediately.

Notes

  • Use seedless lychees for ease.
  • For a non-alcoholic version, substitute rosé with sparkling water or pink lemonade.
  • Adjust sweetness with more or less honey based on your taste and the sweetness of the lychees.
