These Lychee Rosé Popsicles are a refreshing and elegant summer treat made with sweet lychee fruit and sparkling rosé wine, perfect for cooling down with a touch of sophistication.

- 1 can (20 oz) lychees in syrup
- 1 cup rosé wine
- 1 tablespoon lemon juice
- 1 tablespoon honey (optional)
- Fresh mint leaves (optional, for garnish)
Instructions
- Drain the lychees, reserving the syrup.
- In a blender, combine lychees, 1/2 cup of the reserved syrup, rosé wine, lemon juice, and honey if using. Blend until smooth.
- Pour the mixture into popsicle molds, leaving a little room at the top for expansion.
- Insert sticks and freeze for at least 6 hours or overnight until completely frozen.
- To release, run warm water over the outside of the molds for a few seconds.
- Garnish with fresh mint leaves if desired and serve immediately.
Notes
- Use seedless lychees for ease.
- For a non-alcoholic version, substitute rosé with sparkling water or pink lemonade.
- Adjust sweetness with more or less honey based on your taste and the sweetness of the lychees.
