Ingredients

1 cup ladyfinger cookies, crushed

8 oz mascarpone cheese

1/4 cup powdered sugar

2 tbsp brewed espresso, cooled

1 tsp vanilla extract

1/4 cup dark chocolate, melted

Cocoa powder (for coating)
Instructions

Prepare the Mixture:
In a bowl, mix crushed ladyfinger cookies, mascarpone, powdered sugar, espresso, and vanilla until smooth. -
Stir in the melted dark chocolate until fully combined.

Cover and refrigerate for 1–2 hours, until the mixture is firm enough to shape.

Using a small scoop or your hands, form the mixture into 1-inch balls. Place on a parchment-lined tray.

Roll each truffle in cocoa powder, shaking off any excess.

Chill truffles for another 30 minutes to set.

Serve and enjoy, or store in an airtight container in the refrigerator for up to 1 week.
