Description

A refreshing and hearty salad featuring grilled chicken, crisp vegetables, Kalamata olives, and tangy feta cheese, all tossed in a zesty Greek dressing.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Greek salad dressing

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub chicken breasts with olive oil, oregano, salt, and pepper.
  3. Grill the chicken for 5-7 minutes on each side, or until fully cooked. Let rest for 5 minutes before slicing.
  4. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  5. Add sliced grilled chicken on top.
