A delightful and elegant tart featuring a crisp crust, creamy whipped ricotta, sweet fresh figs, and a drizzle of honey – perfect for a light dessert or an afternoon treat.

- 1 sheet puff pastry, thawed
- 1 cup ricotta cheese
- 1–2 tbsp honey (plus more for drizzling)
- 1/2 tsp vanilla extract
- 1/2 tsp lemon zest
- 6–8 fresh figs, sliced
- 1 tbsp olive oil (for brushing crust)
- Fresh thyme leaves (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface and transfer it to the baking sheet. Use a knife to score a 1-inch border around the edges, being careful not to cut all the way through.
- Brush the edges with olive oil and bake for 15–20 minutes or until golden and puffed. Let it cool.
- In a bowl, whisk together ricotta, honey, vanilla extract, and lemon zest until smooth and fluffy.
- Once the pastry is cool, gently press down the center and spread the whipped ricotta mixture evenly within the border.
- Arrange fig slices on top of the ricotta.
- Drizzle with additional honey and garnish with fresh thyme leaves, if using.
- Serve immediately or refrigerate until ready to serve.
Notes
- Make sure puff pastry is fully thawed before using.
- Use a food processor for extra smooth ricotta.
- Best enjoyed fresh but can be stored in the fridge for up to a day.
