Description

A delightful and elegant tart featuring a crisp crust, creamy whipped ricotta, sweet fresh figs, and a drizzle of honey – perfect for a light dessert or an afternoon treat.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup ricotta cheese
  • 12 tbsp honey (plus more for drizzling)
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 68 fresh figs, sliced
  • 1 tbsp olive oil (for brushing crust)
  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and transfer it to the baking sheet. Use a knife to score a 1-inch border around the edges, being careful not to cut all the way through.
  3. Brush the edges with olive oil and bake for 15–20 minutes or until golden and puffed. Let it cool.
  4. In a bowl, whisk together ricotta, honey, vanilla extract, and lemon zest until smooth and fluffy.
  5. Once the pastry is cool, gently press down the center and spread the whipped ricotta mixture evenly within the border.
  6. Arrange fig slices on top of the ricotta.
  7. Drizzle with additional honey and garnish with fresh thyme leaves, if using.
  8. Serve immediately or refrigerate until ready to serve.

Notes

  • Make sure puff pastry is fully thawed before using.
  • Use a food processor for extra smooth ricotta.
  • Best enjoyed fresh but can be stored in the fridge for up to a day.
