- 2 cups mashed potatoes
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 tsp salt
- 1 tbsp oil or butter (optional, for serving)
- Sauce or toppings of choice (optional)
Instructions
- In a bowl, mix the mashed potatoes and salt until smooth.
- Gradually add flour and mix until a soft dough forms.
- Transfer the dough to a floured surface and knead lightly until smooth.
- Divide the dough into portions and roll each into a long rope.
- Cut the ropes into bite-sized pieces or desired noodle shapes.
- Bring a large pot of salted water to a boil.
- Drop the noodles into the boiling water and cook until they float, about 2–3 minutes.
- Drain and optionally toss with oil, butter, or sauce of choice.
Notes
- Make sure the mashed potatoes are not too wet or the dough may become sticky.
- You can freeze the uncooked noodles on a tray and store in a bag for later use.
- Best served fresh, but leftovers can be sautéed for a crispy texture.
