Description

A delicious and easy Crockpot Sweet and Sour Chicken recipe featuring tender chicken pieces cooked in a tangy and sweet sauce with bell peppers and pineapple. Perfect for a hassle-free dinner.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into chunks
  • 1 cup pineapple chunks (canned or fresh)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup brown sugar
  • 1/3 cup rice vinegar
  • 1/3 cup ketchup
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked white rice, for serving

Instructions

  1. Place the chicken chunks in the bottom of the crockpot.
  2. Top with pineapple chunks and chopped bell peppers.
  3. In a bowl, mix together brown sugar, rice vinegar, ketchup, and soy sauce.
  4. Pour the sauce mixture over the chicken and vegetables in the crockpot.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, mix the cornstarch with water and stir into the crockpot to thicken the sauce.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked white rice.
