Description

Crispy Thai Butterflied Shrimp is a flavorful appetizer featuring butterflied shrimp marinated in Thai spices, coated in a light batter, and deep-fried to golden perfection. Perfect as a snack or starter.


Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on)
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/3 cup cold water
  • Vegetable oil, for deep frying
  • Fresh cilantro or Thai basil for garnish (optional)

Instructions

  1. Butterfly the shrimp by slicing along the back and flattening gently. Pat dry with paper towels.
  2. In a bowl, mix garlic, fish sauce, soy sauce, sugar, and white pepper. Add shrimp and marinate for 15–20 minutes.
  3. In another bowl, whisk the egg, flour, cornstarch, baking powder, and cold water until smooth to make the batter.
  4. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  5. Dip each marinated shrimp into the batter, allowing excess to drip off.
  6. Carefully fry the shrimp in batches for 2–3 minutes or until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. Garnish with fresh cilantro or Thai basil if desired, and serve immediately with dipping sauce.

  • Ensure oil temperature remains steady for even frying.
  • Serve with Thai sweet chili sauce or spicy peanut sauce for dipping.
  • Do not overcrowd the pan while frying to maintain crispiness.
