Description

A creamy and rich homemade classic vanilla ice cream made with simple ingredients and full of smooth vanilla flavor.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • Pinch of salt
  • 5 large egg yolks

Instructions

  1. In a medium saucepan, combine the milk, sugar, and salt. Heat over medium heat until the mixture is warm and the sugar is dissolved.
  2. In a separate bowl, whisk the egg yolks. Slowly pour about 1/2 cup of the warm milk mixture into the yolks, whisking constantly to temper the eggs.
  3. Gradually pour the tempered egg yolks back into the saucepan with the remaining milk mixture, stirring constantly.
  4. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 170°F or 77°C).
  5. Remove from heat and stir in the heavy cream and vanilla extract.
  6. Chill the mixture in the refrigerator for at least 4 hours or overnight.
  7. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20–25 minutes).
  8. Transfer the churned ice cream to a lidded container and freeze for at least 2 hours or until firm.
