- 1 large egg, beaten

Instructions
- In a bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, onion powder, salt, and pepper.
- Form mixture into small bite-sized balls.
- Roll each ball in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil in a deep pan over medium heat.
- Fry the potato bites in batches until golden and crispy, about 2–3 minutes per batch.
- Drain on paper towels and serve hot.
