Description

These Caramel-Drizzled Apple Cinnamon Cookies are soft, spiced, and bursting with apple chunks—finished with a luscious caramel drizzle for a cozy fall-inspired treat. Ready in just 30 minutes, they’re perfect for holiday baking, gifting, or simply enjoying with a warm drink.

Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened

  • 3/4 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 1 cup apples, peeled and diced

  • 1/2 cup chopped nuts (optional)

For the Caramel Drizzle:

  • 1/2 cup caramel sauce (store-bought or homemade)

  • Sea salt, for sprinkling (optional)

Instructions

Prepare the Cookie Dough:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.

  3. Beat in egg and vanilla until well combined.

Mix the Dry Ingredients:
4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
5. Gradually mix dry ingredients into the butter mixture until just combined.
6. Fold in diced apples and nuts (if using).

Bake the Cookies:
7. Scoop dough into rounded tablespoons onto prepared baking sheets, spacing 2 inches apart.
8. Bake for 12–15 minutes until edges are golden.

Cool and Drizzle:
9. Let cookies cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
10. Drizzle with caramel sauce and sprinkle with sea salt, if desired.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture.

  • Try adding raisins or a pinch of nutmeg for a deeper spiced flavor.

  • Store in an airtight container for up to 3 days, or freeze un-drizzled cookies for longer storage.
