Instructions

Cook the Broccoli: Steam or boil broccoli for 5–7 minutes until tender. Drain and let cool.

Chop Broccoli: Once cooled, chop into small bite-sized pieces.

Mix Base Ingredients: In a large bowl, whisk eggs, olive oil, garlic powder, onion powder, salt, and pepper.

Combine: Add chopped broccoli, cheddar cheese, breadcrumbs, and Parmesan (if using). Mix until well combined.

Shape: Roll mixture into 1-inch balls using hands or a spoon. Place on a parchment-lined baking sheet.
