Description

These Broccoli Cheese Balls are the ultimate veggie-packed snack—crispy on the outside, gooey with cheddar on the inside, and irresistibly flavorful. Perfect as an appetizer, side dish, or anytime snack, they’re a fun and delicious way to get your greens!


Ingredients

  • 2 cups cooked broccoli, chopped into small pieces

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup breadcrumbs (panko recommended for extra crunch)

  • 2 large eggs

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

  • 2 tbsp grated Parmesan cheese (optional)

 

  • 1 tbsp fresh parsley, chopped (optional, for garnish)


Instructions

  • Cook the Broccoli: Steam or boil broccoli for 5–7 minutes until tender. Drain and let cool.

  • Chop Broccoli: Once cooled, chop into small bite-sized pieces.

  • Mix Base Ingredients: In a large bowl, whisk eggs, olive oil, garlic powder, onion powder, salt, and pepper.

  • Combine: Add chopped broccoli, cheddar cheese, breadcrumbs, and Parmesan (if using). Mix until well combined.

  • Shape: Roll mixture into 1-inch balls using hands or a spoon. Place on a parchment-lined baking sheet.

  • Bake: Preheat oven to 375°F (190°C). Bake for 20–25 minutes until golden and crispy.

 

  • Serve: Let cool slightly. Garnish with parsley if desired. Serve warm with your favorite dipping sauce.
