-
1/2 cup (1 stick) salted butter, softened

1/4 cup granulated white sugar
-
1/4 cup light brown sugar
-
1 1/2 cups all-purpose flour, spooned and leveled
-
3/4 tsp baking powder
-
2/3 cup chopped vanilla almond bark
Instructions
-
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
-
Heat frozen blueberries in a skillet over medium-high heat for 4–5 minutes until soft and juicy. Cool until warm or room temp.
-
In a large bowl, beat butter, white sugar, and brown sugar together until creamy.
-
Beat in the cooled blueberries on high until fully combined and vibrant in color.
-
Add flour and baking powder, and mix until just combined—do not overmix.
-
Fold in chopped vanilla almond bark.
-
Use a 1½-inch cookie scoop to portion the dough onto the sheet pan (about 8 cookies per batch).
-
Bake for 9–10 minutes until edges are golden and cookies are set.
-
Cool on the pan for at least 5 minutes before serving warm or cool.
Notes
-
Beat the blueberries into the butter and sugar thoroughly for best texture and color.
-
Chop almond bark to your preference—larger chunks give more texture.
-
Bake in two batches to allow cookies room to spread.
-
Store in an airtight container at room temp for 3–5 days, or freeze for up to 6 months.
-
Place wax or parchment paper between cookie layers to prevent sticking.
