- 200g Asian noodles (rice noodles, egg noodles, or soba)
- 2 tbsp vegetable oil
- 1 cup sliced bell peppers
- 1 cup shredded carrots
- 1 cup snap peas or snow peas
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp sesame oil
- 1 tsp sugar
- 2 green onions, chopped
- Sesame seeds for garnish (optional)
Instructions
- Cook noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
- Add sliced bell peppers, carrots, and snap peas; stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Add the cooked noodles to the pan and toss to combine.
- Pour in soy sauce, oyster sauce (if using), sesame oil, and sugar. Stir well to coat noodles and vegetables evenly.
- Cook for another 2 minutes, stirring frequently, allowing the flavors to meld.
- Remove from heat and sprinkle chopped green onions and sesame seeds on top.
- Serve hot as a main or side dish.
